Commercial Smoker OEM Sourcing Guide: China

2026-10-17 00:00

Sourcing a smoker is harder than sourcing a grill, because the specification that matters — heat retention, airflow control and door sealing — is invisible in a quotation. TEKL has manufactured vertical, barrel, offset, pellet and cold smokers in Xiamen since 2006, for barbecue retailers, restaurant suppliers and private-label programmes in North America, Europe and Australia. This guide covers how to specify a smoker so that the unit holds temperature for eight hours instead of two, and how to compare factories that all quote the same price.

1. Smoker formats and what each one is actually for

Vertical cabinet smokers

The workhorse for retail and small commercial use. Vertical format gives a small footprint and even heat across shelves. The critical specification is shelf spacing and the gap between the door and the body — anything above 3 mm leaks heat and forces the burner or firebox to run continuously. Our vertical cabinet smoker is built around a gasketed door for exactly this reason.

Barrel and drum smokers

Low tooling cost, high volume, strong margin for garden and hardware channels. The weakness is temperature stability at the top of the barrel; a well-designed drum uses a diffuser plate or a water pan to break the direct heat.

Offset smokers

Enthusiast and competition segment. The firebox-to-chamber throat diameter determines whether the unit draws properly. Undersized throats create hot spots on the firebox end and a 40 °C gradient across the chamber, which is the most common complaint in reviews of inexpensive offsets.

Pellet smokers

Electrical component, auger, controller and RTD probe. This is a different product category from a charcoal smoker — certification, warranty and spare-parts logistics all change. Do not buy a pellet smoker from a factory that treats it as a charcoal unit with a hopper added. See the pellet smoker platform we build.

Cold smokers

Cheese, fish, sausage and charcuterie. The defining requirement is that smoke reaches the chamber below 30 °C, which means the smoke generator must be separated from the food chamber. Buyers who skip this end up with cooked product instead of cold-smoked product.

Commercial smokers

Restaurants, barbecue joints and food trucks. Specification shifts to throughput, cleanability, gas or electric input, and NSF-style hygiene expectations in the US. Our commercial charcoal smoker is the reference build for this tier.

2. The four specifications that decide whether it works

  • Wall thickness and insulation. 0.8 mm single-wall is a consumer unit. 1.2 mm, or double-wall with a 25–50 mm insulated cavity, is what holds 110 °C for eight hours without babysitting. Insulation is the single biggest cost driver and the single biggest performance difference.

  • Airflow control. Two intake vents and one exhaust, all with positive detents, is the minimum for controllability. A single sliding vent with no detent will drift closed mid-cook.

  • Door sealing. A fibreglass or silicone gasket plus a latch with adjustable pre-load. Ask what the gasket is rated to and how it is replaced — a gasket glued in place with no replacement part is a warranty problem in year two.

  • Drip and ash management. Removable drip tray and a ash drawer that does not require tipping the unit. Commercial buyers will reject a design that cannot be cleaned in under ten minutes.

3. Materials: what to specify and what to refuse

ComponentAcceptableRefuse
Body1.0–1.5 mm cold-rolled steelGalvanised sheet in the cook chamber
Firebox2.0–3.0 mm steel, high-temp coating0.8 mm with standard powder coat
GratesPorcelain-coated steel or cast ironThin chrome wire under 3 mm
GasketFibreglass rope or high-temp siliconePVC or foam weatherstrip
FastenersStainless in all exterior positionsZinc-plated exterior screws
ThermometerBimetal, ±2% accuracy, calibratableDecorative dial with no calibration

Galvanised steel in the cook chamber is the one item to refuse outright: at smoking temperatures the zinc coating can degrade, and the resulting surface is both a food-safety question and a returns driver in the US and EU.

4. Certification and market requirements

Charcoal and wood smokers are covered by EN 1860-1 in the EU. In the United States there is no federal standard for solid-fuel smokers, but large retailers require CPSIA compliance, a Prop 65 statement and often a CSA or ETL file for any electrical ignition or controller. Pellet smokers with a controller are electrical appliances and need the full electrical file — UL or ETL for North America, CE with LVD and EMC for Europe. Ask for the report with the exact model listed; a generic certificate does not cover your SKU.

5. Sample protocol: how to test a smoker before you commit

  1. Biscuit test. Load the chamber with plain biscuits or bread and run a four-hour cook with a data logger at three shelf heights. A well-built cabinet holds within ±10 °C; a poor one swings 40 °C or more.

  2. Leak check. Close all vents and watch the temperature decay curve. Slow decay means the seals work; a fast drop means heat is escaping through the door and seams.

  3. Door cycle test. Open and close 100 times and re-check the gasket compression line. Uneven compression means the hinge or latch is misaligned.

  4. Clean-down. Time how long it takes to remove ash and grease. If it is over ten minutes, commercial buyers will not reorder.

  5. Transit test. Drop the packed carton from the height your channel requires and inspect the door alignment and leg mounts afterwards — that is where damage concentrates.

6. Common mistakes in smoker sourcing

Comparing on price per kilogram. Two smokers at the same weight can differ by 50% in insulation cost. Specifying a thermometer instead of a port. A probe port costs almost nothing and lets the customer use their own controller. Ignoring spare parts. Gaskets, thermometers and grates should be orderable as accessories from day one. Underestimating carton size. A 40 kg cabinet in a poorly designed carton arrives with bent legs and a misaligned door, and there is no way to fix that at the retailer. Buying pellet smokers from a charcoal factory. Different certification, different failure modes, different warranty exposure.

Frequently asked questions

What steel thickness do I need for a smoker that holds temperature overnight?

1.2–1.5 mm single-wall with a well-gasketed door will hold temperature reasonably. For genuine overnight stability without refuelling, specify double-wall construction with 25–50 mm of insulation. Below 1.0 mm the unit loses heat faster than the fire can recover.

What is the minimum order quantity for a custom smoker?

100 pcs per SKU for an existing model with custom colour, logo and packaging. New tooling for a cabinet or offset design typically requires 300 pcs as a first order because the mould and fixture cost has to be amortised.

Can you manufacture pellet smokers with a digital controller?

Yes. Pellet platforms include the auger, controller, RTD probe and hopper, and are quoted with the electrical certification required for the destination market — UL or ETL for North America, CE with LVD and EMC for Europe.

Do you supply commercial smokers for restaurant use?

Yes. Commercial builds differ from consumer units in wall thickness, door hardware, cleanability and throughput. We quote them against a stated capacity — kilos per batch and batches per day — rather than against a retail price point.

How is a smoker packed for export?

Individual carton with foam corner protection, master carton where size allows, and drop testing to the height your channel specifies. Cabinets over 30 kg are usually packed with a reinforced base and vertical strapping to protect leg mounts.
